Characteristics of sourdoughs and baked pizzas as affected by starter culture inoculums

Previous investigations on pizza dough lactic acid bacteria (LAB) revealed that facultative heterofermentative species (FHS) were more represented than obligate heterofermentative species (OHS) within the Lactobacillus genus. Thus, the main hypothesis of this work was that facultative and obligate heterofermentative Lactobacillus species can impact differently the appreciation of baked pizza. Diverging Collectives: Artist-Run Spaces versus Warehouse Shows Comparative models of art production and cooperation among young British artists

The paper addresses the case of artist-run spaces and warehouse shows in the United Kingdom between the 1980s and 1990s, a time when autonomous group shows and independent artist collectives sprawled particularly thanks to the engagement of a new generation of artists, among whom were found later celebrities such as Damien Hirst and Douglas Gordon. It will be argued that both artist-run spaces and warehouse shows were feasible solutions for young authors against art market barriers and economic crisis, although they held structural and organisational differences that would affect aesthetic outcomes and present art history with a shift in the model of the art collective.
Technological and molecular diversity of Lactobacillus plantarum strains isolated from naturally fermented sourdoughs.

Thirty Lactobacillus (L.) plantarum strains, isolated from sourdough, were identified by biochemical tests as well as 16S rDNA sequencing and differentiated on the basis of technological properties, such as amylase, protease, phytase and antirope activities. These properties were shown to be widely differing among the strains, indicating a significant technological diversity. Genetic differentiation was achieved by restriction endonuclease analysis-pulsed field gel electrophoresis (REA-PFGE) that allowed the L. plantarum strains to be divided into 10 different genomic groups. The essay situates the “not Shakespeare” of this volume within the theoretical problematics of the “post-textual.” It re-elaborates the “post-textual” as the uncanny re-appearance of Shakespeare in the form of heterogeneous fragments that are made to cohabit with various textual and media environments. These media products include a “Shakespeare” that is not quite Shakespeare, an “entity” that becomes the site of unceasing transactions (for instance, between an “outside” and an “inside,” between visibility and invisibility, between the “original” and its iteration) and multiple contaminations (through media, characters, and plays).

The present chapter examines Creed’s early career, particularly the artistic connection to his hometown as well as his peculiar conception of creativeness, for which Douglas Gordon emerges as an influential point of reference. This essay focuses on the various forms of narrating, mediating, and interpreting selves within and around a book object, the novel S. (2013) by J. J. Abrams and Doug Dorst. The novel S. is an experiment in producing a deceivingly realistic replica of a maltreated library book object, but its discursive practices also rely on familiar literary forms, harking back to epistolary commonplaces, as well as to marginalia, both ancient and modern. The book object S., which carries the text of the novel-within-a-novel, the readers' multilayered markings, and paraphernalia, forms an archive dramatizing the workings of memory, thought, and emotion. The paper offers an analysis of how tattoos, although they only very recently established a niche of their own in contemporary art, became an important medium of religious art, particularly for Christianity. In doing so, this contribution analyses the possible existence of borders and gatekeepers between different art worlds.
